This real, easy-to-friendly Fried Rice Recipe is as nice as taking and extremely easy to create. Loaded with fresh vegetables, healthy and tasteful.
This rice is chicken-free, but if you want chicken fried rice, it’s the same recipe.The beauty of fried rice is that there are enough textures going on that it doesn’t need much. Aside from sesame oil, which delivers a toasty nutty flavor, we stir in fresh ginger (you can sub in ground, but we prefer the strong zing from the fresh stuff), garlic, and soy sauce.

- 3 tbsp. sesame oil, divided
- 3 large eggs
- Kosher salt
- 2 carrots, diced
- 3 green onions, thinly sliced, white and green parts divided
- 3 cloves garlic, minced
- 1 tbsp. peeled and minced ginger (from a 1″ piece)
- 4 cup cooked long grain rice (preferably leftover)
- 3/4 cup frozen peas
- 3 tbsp. low-sodium soy sauce
Up to very warm, about 2 minutes, heat a big cast iron pan over elevated warm. Add 1 tbs of oil.
Smash the egg and add to the skillet with 2 teaspoons of water and a big pinch of salt. Cook, stirring around 30 seconds to form big soft curds. Move to a tray.
Give the skillet back to elevated heat and add 2 tablespoons of oil, carrots and green onion whites. Cook for about 2 minutes until slightly golden. Stir in garlic and ginger and boil for 1 minute until fragrant.
Add to skillet rice, peas, and cooked eggs. Add soy sauce and boil, stirring for 1 minute until heated. Stir in the remaining green onions and season with salt and pepper.
