This simple Hummus recipe is good for making sandwiches for your lunchbox, or just for serving with bread sticks or pitta. Try this homemade soft and creamy recipe for hummus.

- 1 cup dry chickpeas (or 2 (15-oz.) cans chickpeas)
- 2 tsp. baking soda, divided
- 1 tbsp. lemon juice
- 1/2 cup tahini
- 1 tsp. cumin
- 1 1/2 tsp. kosher salt
- 1/2 tsp. red pepper flakes
- Freshly ground black pepper
- 3/4 cup olive oil, plus more for topping
- Paprika, for garnish
- Freshly chopped parsley, for garnish
Place chickpeas and 1 tsp of baking soda in a big bowl and cover at least one inch with water. Let them soak overnight.
Oven preheat to 400 °. Strain and position chickpeas in a big pot. Add the remaining baking soda teaspoon and cover with at least one inch of water again. Then cover and decrease heat to a boil. Let it simmer for 1 hour until tender and fall apart. Skim foam as needed off the top.
Drain chickpeas and put them in a food processor’s bowl. Add garlic (if used), juice of lemon, tahini, cumin, salt, flakes of red pepper and pepper. Mix until it is smooth.
Slowly flow in olive oil until hummus is at the required consistency with the food processor running. With olive oil, paprika and parsley, spoon hummus in a bowl and top.
