Rice is quickly coming together, so make sure your ingredients are ready to go before you begin.

Chilled leftover rice works best for stirring fries because it doesn’t clump together, so if time permits, cook the rice in advance (see notes for the recipe).

RICE NOTES

You will need to cook around 2⁄3 cups of dry rice per 2 cups of cooked rice.In a fine mesh colander, rinse well to cook the rice, then bring a large pot of water to boil.

Add the rice and let it cook for 30 minutes, uncovered. Drain the remaining water from the cooking and return the rice to the bowl.

Cover the pot and let the rice steam for 10 minutes off the water. Spread over a parchment paper-lined rimmed baking sheet to chill the rice ASAP and let it cool down in the fridge.

  1. Heat oil in a large pot over medium heat. Add onion, peppers, and pineapple and cook for about 5 minutes until vegetables are soft and caramelized with pineapple. Add the garlic and cashews and cook for 1 minute, until fragrant.
  2. Incorporate rice and peas, add lime juice, soy sauce, and sriracha. Cook about 3 minutes more to coat and warm rice.
  3. Push rice and add eggs to one side of the skillet. Remove until almost completely cooked, then fold into a mixture of rice.
  4. Garnish and serve the rice with green onions.

Ingredients:

  • 2 tbsp. coconut oil
  • 1 red bell pepper, diced
  • 1 cup diced fresh pineapple
  • 3 cloves garlic, minced
  • 1/4 cup cashews, chopped
  • 1 medium onion, chopped
  • 3 cup cooked rice (preferably day old)
  • 1/2 cup frozen peas, thawed
  • Juice of 1 lime
  • 2 tbsp. low-sodium soy sauce
  • 1 tsp. Sriracha
  • 2 large eggs, beaten
  • 2 green onions, thinly sliced

Method:

Heat oil in a medium heat big skillet. Add onion, tomatoes, and pineapple and boil for about 5 minutes until vegetables are tender and caramelized with pineapple. Incorporate garlic and cashews and boil for 1 minute more until fragrant.

Combine rice and peas, add lime juice, soy sauce, and sriracha. Cook about 3 minutes more to coat and hot rice.
