How can I roast a prime rib in the oven?
You’re going to want to cook your prime rib at two temperatures: first at the high heat of 450º, which will help get a nice sear on the outside of your meat and lock in its juices, and then at 350º to roast all the way through. Once you sear the meat at a high temp for 30 minutes, you reduce the heat and continue cooking until the meat thermometer reads 120º for medium

- 1 standing rib roast (about 1/2 pound per person)
- 1 tbsp. kosher salt
- 2 tsp. black pepper
- 1 bunch fresh rosemary
Remove the rib roast and position it in a roasting pan. Let about 30 minutes come to room temperature. Preheat oven to 450 degrees.
Cover generously with salt and pepper on all sides of the rib roast. Place the roast fat-side up in a roasting pan. Arrange half of the rosemary around the roast at the bottom of the pan.
Reduce heat to 350o and boil for medium rare 1 hour and 30 minutes more. (Plan approximately 15 minutes per pound.)
Remove from the oven, cover with foil, and allow 20 minutes to rest.
Slice along ribs to remove them to serve, then separate and set aside each rib. Slice the shape of the roast over the grain. Serve on a ribs plate and half new rosemary remaining.
