For this recipe, there are two cooking methods:
SAUTE FIRST THEN ROAST:
Upon roasting, this process produces an enticing fried and nutty flavor. To get them deliciously caramelized and slightly charred, pan fry sprouts first in hot oil. Just before they hit the oven, add butter and garlic to roast until tender. When fried, top with cheese and eat the whole dish.
OVEN ROAST ONLY:
Sprinkle with olive oil, butter, garlic, salt and pepper. Place them on a sheet of baking and roast until tender fork. The cheese is going on under the broiler (or grill) in the last 5 minutes to melt into a delicious warm mozzarella cheese blanket.
They’re both great. The first method of pan fried comes just a little ahead of the process of the oven. Nothing beats the unmistakable fried taste in oil, but that’s personal preference!
