This salad is filled with veggies; juicy tomatoes, crisp cucumber, smooth avocado and the coriander and lemon juice make the whole salad so fresh and flavorful!
In a wide salad bowl, put the chopped tomatoes, sliced cucumber, sliced red onion, diced avocado and chopped cilantro.
Finish with 2 Tbsp of olive oil and 2 Tbsp of lemon juice. Gently throw to blend.
In one sitting I ate all this batch of this salad with avocado, combined with roasted red potatoes and grilled shrimp skewers.
Until I remembered the shrimp and potatoes on my plate I shoveled most of the salad into my mouth; mmming and laughing all the way back. We both were smitten.
