This healthy recipe for apple cinnamon muffins is an eternal favorite because it requires very little work and practically no kitchen equipment.

It will suffice for two bowls, a whisk, a muffin tin and a grater. The method used here, as with many similar recipes,

combines all the wet ingredients in one bowl and all the dry ingredients in another, before mixing them together.

Make sure you add the dry ingredients with the wet ingredients to the bowl, rather than wet to dry,

to help you incorporate everything evenly and to avoid lumps of flour in your muffins.

Instructions
  1. Oven preheat to 350F. Mix the eggs and the agave together until smooth. Add olive oil, and continue to mix. Whisk the flour, baking powder, cinnamon and salt into a separate bowl.
  2. To the wet mixture add these and mix with a spatula. Fold in an apple rubbed in. Share the batter into the liners of muffins, top with thin slices of apples and sprinkle cinnamon over them. Bake for around 15 minutes.
  3. Check if a toothpick is used to make them. Remove the tin from the oven and allow to cool.
