  1. Oven preheat to 350F. Mix the eggs and the agave together until smooth. Add olive oil, and continue to mix. Whisk the flour, baking powder, cinnamon and salt into a separate bowl.
  2. To the wet mixture add these and mix with a spatula. Fold in an apple rubbed in. Share the batter into the liners of muffins, top with thin slices of apples and sprinkle cinnamon over them. Bake for around 15 minutes.
  3. Check if a toothpick is used to make them. Remove the tin from the oven and allow to cool.
