  1. Heat oil in a large pot over medium heat. Add onion, peppers, and pineapple and cook for about 5 minutes until vegetables are soft and caramelized with pineapple. Add the garlic and cashews and cook for 1 minute, until fragrant.
  2. Incorporate rice and peas, add lime juice, soy sauce, and sriracha. Cook about 3 minutes more to coat and warm rice.
  3. Push rice and add eggs to one side of the skillet. Remove until almost completely cooked, then fold into a mixture of rice.
