We often have this easy eggplant casserole, because it’s quite easy to make. Plus, when eggplant comes along with meatballs, tomatoes and garlic, it is sooo delicious.

My family (even my husband who isn’t a vegetable fan) and friends enthusiastically welcome him on the very dinner table and I get lots of positive comments.

When I want to have a healthy and tasty dish with lots of protein and vegetables, this easy Middle Eastern eggplant dish comes to my help immediately.

Eggplant is a great fiber source, and is a pack of vitamins and minerals. Vitamin K, manganese and folate are very rich. So we’re trying to include it as much in our diet as we can these days before the official start of fall season.

The ingredients for this simple casserole recipe vary depending on the country from which it originates. I’ll share that Turkish version here. It is slightly different from others that are mostly made from a type of cheese such as mozzarella or parmesan. Unlike those cheesy recipes, we do it with meatballs in Turkey.

Instructions
meatballs:
  1. Combine all ingredients in a large bowl, excluding baking soda, lime juice, and water.
  2. Whisk soda, lemon juice and water together in a small bowl. Pour over the remaining ingredients. Combine everything with your hands together well. Cover and allow to sit in the fridge for 2-3 hours or overnight.
casserole:
  1. Oven preheat to 400F (200C) Slice the Leeks. Soak in water, sprinkle 1 teaspoon of salt over them and wait 15 minutes. Drain them with paper towel, and dry them.
  2. Put the meatballs and eggplant slices in turns in a baking pan. Drizzle the meatballs and eggplants over the olive oil and bake for 30 minutes.
  3. Randomly place garlic slices and green peppers in the saucepan. Pour over tomato puree. Sprinkle with salt and black chili pepper. Bake 15 more minutes.
  4. Garnish with chopped parsley and serve hot.
