It is one of those vegetables that need extra flavors to make a delicious dish. Even for the cauliflower haters, it easily becomes a favorite when you know the right ingredients to pair with it.

Tangy flavor since I’ve used a lot of lemon here. I don’t think most people like cauliflower, because the cooking smells bad. They also don’t like that smell even after it’s cooked.

This is the one of the recipes that I’ve learned from mom. She thinks cauliflower onion doesn’t go well so instead she uses lots of garlic.

I also have to tell you that when cooking cauliflower, she is even more generous about lemon than I are. The result is an incredibly delicious, tangy and garlicky cauliflower with a tomato sauce.

Vegan Cauliflower Casserole
Instructions
  1. Put the florets of cauliflower, tomatoes, and garlic into a pot.
  2. Drizzle over olive oil.
  3. Season to salt and spices.
  4. Squeeze the lemon and throw the zest into the pot with half of it.
  5. Mix the tomato paste or pepper paste and pour it into the pot with hot water.
  6. Cook it until tender, covered over medium low heat.
  7. Oven preheat to 375F (190C)
  8. Transfer the cooked platter into a saucepan and bake for half an hour. Garnish with parsley and serve.
